DSCN1550 Breakfast and Lunch Ideas

I’ve had a lot of people ask for some breakfast and lunch ideas, and understandably, as these can be more difficult meals to adjust to making out of real food. Bagels are fast, but some of these ideas are just as fast, and healthier too!

Healthy Breakfast Ideas:

Homemade Energy Bars (Easy and Delicious!)

Easy Breakfast Egg Muffins

Coconut Flour Protein Waffles

Protein “Brain Power” Smoothie

Easy Oven Omelet (AKA Leftover Omelet)

Veggie and Egg Stir Fry- Just take some leftover or frozen veggies and scramble with butter. When they are cooked/hot add a few eggs and scramble. Simple and fast!

Hard boiled Eggs with Berries and Cream- Whip some heavy cream with vanilla and dollop on berries. Serve with a couple pre-boiled eggs from the fridge.

Egg, Avocado and Bacon Salad- (recipe to follow) – Simple version: boil eggs and chop, chop an avocado and chop some cooked bacon. Mix together and eat.

Pre-make a Quiche or Frittata- Cook some veggies/meat or use leftovers, put in the bottom of a buttered pie pan. Top with eggs (beat first) and cheese.

Coconut Muffins: Full Recipe/instructions coming soon. Beat 5 eggs, 1 cup applesauce, 1/2 cup coconut flour, cinnamon, 2 tsp honey (optional) and 1/2 tsp sea salt. Bake in muffin tins for 15 mins at 400 degrees. Add blueberries, nuts, banana, etc for desired flavor.

Healthy Lunch Ideas:

Leftovers- Always a great option if you can keep enough food made ahead!

Salads:

Caprese Salad-Tomatoes, Basil and Mozzarella

Better than Restaurant Fajita Salad

Perfect Chicken Salad

Steak and Sweet Pepper Salad

Grilled Citrus Chicken Salad with Cucumber, Egg and Strawberries

Tuna Salad with Apples and Walnuts

Fiesta Chicken Salad with Guacamole and Salsa

 

Cold Meatza-  Healthy Homemade Meat Based Pizza- Meatza!

Simple Lettuce Tacos (can also be made with lunch meat or other leftovers)

Leftover Salmon Cakes Wrapped In Bacon

Tuna Salad with Apples and Walnuts

Leftover Slowcooker Barbecue Ribs with Homemade Barbecue Sauce

Leftover Stuffed Bell Peppers with Guacamole (I always make a lot of these)

    Maybe I should qualify that a bit. The poor kid gets only 15 minutes for lunch. Yes, only 15 minutes is slotted for lunch time at his school! When the lunch is too complicated, or something that actually takes time to eat, he comes home STARVING, with most of his lunch uneaten and I know he’s not at his best at school then. I try to provide him with a high protein/high fat breakfast, but he’s a light breakfast eater, so I don’t think that’s enough to keep him going all day. It’s been very frustrating this whole year.

    Becky, I don’t know if you’ll see this reply since it’s a couple months after your post, but if you do . . . What about a variety of finger foods – depending on what your child will eat:
    * cheese cubes
    * sliced hard boiled egg
    * chunks of cooked meat, lunch meat, hot dogs, or even a cold chicken wing
    * veggies like baby carrots, celery sticks, cucumber slices, grape tomatoes
    * pieces of fruit like berries, mandarin orange slices, sliced apples, banana chunks (dip veggies that will turn brown in lemon juice).
