After finding out I was gluten sensitive last year, I have been slowly adapting to the gluten free lifestyle. Overall, it has been a great shift for our family, though a difficult one to get used to. The part I had the most trouble with at first was finding recipes to plan meals that didn’t involved grains or gluten. To hopefully make the transition easier for anyone else joining the growing number of gluten free families, I will post our meal plans for the week at the beginning of each week. If you want a recipes, just let me know!
Here’s this week’s meal plan:
Monday: Beef stew with Asparagus and Salad
Tuesday: Spinach Stuffed Meatloaf with Sweet Potatoes and Broccoli
Wednesday: Balsamic glazed Chicken and Apples over salad
Thursday: Skillet Steak with Caramelized Onions, Cauliflower and Salad
Friday: Eggplant Parmesan and Fresh Herb Salad with Viniagrette
Saturday: Spinach, Asparagus, Mushroom, Cheese and Chicken Crust-less Quiche
Sunday: Chicken Soup with Carrots, Celery, Spinach, Broccoli, and my seasoning blend
