Simple Cucumber Salad Recipe

When summer is finally in full swing and cucumbers are growing, this cucumber salad is a great simple “salad.” Also, if you already grow dill with your cucumbers to help control garden pests, you’ll have two of the ingredients right in your backyard!

All you need is cucumber, red onion, and a few kitchen staples you’re sure to already have on hand and presto… a delicious and healthy summer salad.

Simple Cucumber and Onion Salad

I’ve used cucumbers in many different ways: smoothies, infused waters, dips, sauces, and even as noodles! You can find my full list of cucumber recipe ideas in this post.

If you’re looking to keep it simple when it comes to using summer produce, there’s no better option than this quick and easy cucumber salad recipe. With only a few ingredients, you can have this healthy and fresh side dish ready in about 10 minutes.

Just:

  1. Chop up some cucumber and onion
  2. Drizzle on a simple vinaigrette
  3. Done!

Sometimes I serve this right away, but it’s even better if it marinates the dressing for half an hour first. I usually make it first and stick it in the fridge while I make the rest of the meal.

Note: Some cucumber salad recipes suggest scooping out the cucumber seeds, but personally the seeds are my favorite part. If they bother you, remove them first.

Variations

I’ve seen similar recipes with tomatoes, but since I couldn’t have them on my autoimmune protocol, I never added them. If you’re a tomato lover, feel free to add some cherry tomatoes or even add avocado!

It’s also very easy to make this into a full Greek salad (the traditional no-lettuce version).

Make It a Meal

With only a few ingredients, this cucumber and onion salad makes a great side dish to bring to an event. I also like it topped with some leftover grilled chicken for a fast lunch.

Cucumber Salad Recipe

A simple cucumber and onion salad seasoned with flavors of garlic and dill.

Ingredients
  

  • 3 cucumbers
  • ½ red onion
  • ½ cup apple cider vinegar (or white wine vinegar)
  • ¼ cup olive oil
  • 2 TBSP honey (or a few drops of stevia)
  • ½ tsp salt
  • ½ tsp pepper
  • ½ tsp garlic powder
  • 2 TBSP fresh dill (chopped)

Instructions
 

  • Cut the cucumbers in half lengthwise and then slice.
  • Thinly slice the onion.
  • Place the cucumber and onion in a medium sized bowl.
  • In a glass 2 cup measure make the dressing by whisking together the vinegar, olive oil, honey, salt, pepper, garlic, and dill.
  • Pour the dressing over the cucumbers and onions and stir until well coated.
  • Store in the refrigerator for at least two hours to let flavors marry.
  • Serve and enjoy. 

Notes

Pairs especially well with grilled meats and summer dishes.

    This salad is one of my favorites. Another amazing favorite of mine is a mixture of English cucumbers, Roma tomatoes, sliced red onions and diced avocados with an olive oil, chopped cilantro, fresh squeezed lemon, salt and pepper dressing. It is also amazing with imitation crab meat. Thank you for this recipe.

    You know, I absolutely LOVE onions. However, there are multiple sources that claim it as a neurotoxin. Ancient cultures (Taoists and Hindus) have also deemed them unfit for human consumption. I would love to hear what you have to say about them, as well as any member in the Allium family (leeks, garlic, scallions, chives).

    I make this but add a pint of cherry tomatoes (halved) and a can or jar of olives and lots of fresh dill or basil- whichever I have. Love your blog! Feel way healthier since using many of your recipes

    your cucumber salad looks yummy. our version is similar only we add tomatoes and and toss it in mayo, we soak the onions in acv for 10-15 min to take some edge off before adding them to the salad, this is a fav in our home!!!

    Let me start by saying I enjoy trying different recipes but I don’t consider myself an extravagant cook like my parents and grandparents and fiance. This is have been blessed with a family that enjoys cooking and I don’t have to unless I want to try a recipe. Next, my mom and I are the only natural eater in the family. Everyone else normally frowns upon our dishes because they are healthy. They won’t even try it. They just want traditional food. Well I made this salad with ingredients from my garden along with raw honey and braggs apple cider vinegar. My dad, who is the biggest critic of all, loved this salad. He went back for 3rds. He even took some to work and ate the last bit last night after work. I couldn’t believe it. Everyone kept saying it was delicious and they loved the dresssing. I finally told them it was healthy and natural. You should have seen the look on their faces!

    Like! I actually improv-ed a salad a lot like this the other night because we got gorgeous fresh cukes in our farm box. I didn’t think to add red onion or garlic powder (inspired suggestions, I’ll try those next time!) but it was simple and easy and delicious. And dried dill worked just fine, though fresh would have been amazing.
