Healthy Chocolate Almond Butter Cookie Recipe Chewy Chocolate Cookies

Ever had a craving for chocolate? Being pregnant, I wouldn’t know a thing about that icon smile Chewy Chocolate Cookies but these will satisfy the most serious of chocolate cravings in a healthy way. They are actually very high in protein, and you’d have a hard time eating more than a couple of these! Certainly not a treat to be eaten daily, but these cookies are a delicious (and healthy) way to eat a treat without the consequences of grains! My sister-in-law and I just discovered that almond butter makes a good substitute for the flour and butter combo in most sweets- so many more recipes like this to come!

Healthy Chocolate Cookie Ingredients:

  • 1 and 1/4 cup real almond butter (no added ingredients)
  • 1/3 cup cocoa powder
  • 2 eggs
  • 2 T coconut flour
  • 1 tsp vanilla
  • handful of quality chocolate chips or chopped dark chocolate
  • honey to taste (optional)

How to Make Healthy Chocolate Cookies:

  1. Preheat oven to 350 degrees
  2. Mix all ingredients in a medium bowl (I used an immersion blender, but a wooden spoon works just as well!)
  3. Make into cookie sized balls with your hands and put on baking sheet.
  4. Smoosh with your hand to make an actual cookie shape.
  5. Bake 10-15 mins, depending on your oven… do not overcook!
  6. Note: These do not rise, spread or melt like “regular” cookies, so get them the shape you want before baking!
  7. Makes six large or eight medium cookies.
  8. Enjoy with a glass of coconut milk!

    How many cookies does this make and what temp do you bake them on?

    Oops! Just added that.. bake at 350, and it makes 6-8 medium large cookies or 10-12 small ones.

    Could you use whole wheat flour instead of coconut flour?

    The proportions would be different… If you eat wheat, I’d just find some good recipes made for wheat flower since this one might be hard to convert…

    I made with Coconut Cream Concentrate and Butter due to nut allergy! turned out GREAT! Tried recipe again with Almond butter and ended up with nothing but cookie crumbles… :( But delicious cookie crumbles..
