Tis the season for pumpkin spice everything. I’ve been making spiced pumpkin lattes and pumpkin spice muffins for breakfast occasionally, but I wanted a really filling no-bake treat that I could whip up for the kids.

I’ve made coconut meltaways before with flavors like citrus, chocolate, and strawberry (I need to post those recipes too!) and I wondered if I could make a fall inspired pumpkin spice variation.

After a few tries, I created a recipe that I love and that the children love too. It is simple to make and doesn’t require turning on the oven.

Pumpkin Spice Meltaways

I made these in a silicon gingerbread man mold, but they could be made in any type of silicon mold or even in a glass container and then sliced into cubes.

As with any recipe, they can be adjusted to your tastes. Add a little more honey or maple syrup for a sweeter meltaway, or leave it out entirely for a sugar free option.

For this recipe, I used equal parts coconut oil and coconut butter/cream. You could also use butter in place of the coconut oil as desired or use a mix of both. If I don’t make it myself (here’s the recipe), I buy coconut cream concentrate (coconut butter) from Amazon.

BONUS: Drop one of these into a blender with a cup of coffee or tea for an instant pumpkin spice latte!

Delicious pumpkin spice treats made with nutrient-rich coconut oil and coconut cream with fall inspired spices. These treats are easy to make and filling (and they can be made sugar free!).

Ingredients
  

  • ¾ cup coconut oil
  • ¾ cup coconut butter (or make your own)
  • 1 tsp  pumpkin pie spice (or ½ tsp cinnamon, ¼ tsp nutmeg, and a dash of cloves)
  • 1 TBSP  honey (or maple syrup, optional)

Instructions
 

  • Melt the coconut oil on stove over low heat.
  • Place melted coconut oil and coconut cream/butter in a blender.
  • Add spices and sweetener if using and blend until smooth. If you don't have a blender, you can melt all ingredients in a small saucepan to incorporate instead.
  • Carefully spoon into silicon molds or a glass container.
  • Put in the freezer for about an hour to set and pop out of molds.
  • I store these in the refrigerator for up to two weeks. They would probably last longer since all ingredients are shelf stable, but I haven't personally tested them.

Notes

This is one of those recipes that can easily be adjusted to fit your family's preferences. The spices listed above will make a slightly spicy meltaway. I suggest adding slowly and tasting as you go to get the flavor you prefer. Feel free to adjust the sweetness similarly.
Store in the refrigerator or freezer to keep firm.

    I just had to tell you-I’ve been doing this Paleo thing for a month now. When I started it I thought what have I got to lose..every joint hurts, I can barely move much less exercise, I’d gained so much weight and every time I tried to diet I was crushed by overwhelming cravings. My mental health was in the dumps; I was fighting the aftermath of a horrid divorce and couldn’t pull myself together. It seemed that all I could do each day was put one foot in front of the other; if I managed to cook something for myself that was an exhausting day. I’d gone to my doctor with no avail; I went back and she tried some tests but just couldn’t find anything. So on a chance comment from a friend I started this paleo lifestyle. A little at a time but within a week I was immersed in it. I started to see improvements within a week and after a month I have dropped 15 lbs, joint pain is gone, mood better, no more blood sugar spikes. Went back to my doctor and she was astounded, asked me what I had done. After I told her she of course was concerned about all the fat and meat; she wanted labs. Sp I gave them some blood and got my results today. My labs have improved so much, my LDL has gone down -a lot- my HDL has gone up. All my others have significantly improved and she is baffled. I love this site, it is the first I came to and continue to come to for support, info and great recipes. Thank you so much for giving me my life back. Oh yeah, I forgot…my mom (90 yrs old) saw my results and now she is doing it too.

        Elina, it really does work – but you have to be honest (and diligent) about what you are eating. But really the cravings that I used to have are almost all gone. Once in a great while I crave a sweet so I eat a fruit or dried date and I am completely satisfied. No one believes me until they see it..lol!
        My mom used to have a terrible addiction to ice cream, she could go through gallons in a few days. She has stopped that and her diet coke addiction. I do have to say that diet coke is still my fave even though I don;t drink it. Hey, it’s not magic we have to do some work! =D

      Congratulations! I too have been on Paleo for almost 3 years. I saw all the improvements you have seen in a short amount of time. I have been losing hair for over a year (tried many things and dermatologist says its “female patterned baldness” and just recently decided I might should add some “good grain” to my diet. I have a sensitivity to wheat, so just added steel cut oats, quinoa, granola.

      Bad choice. Weight gain for the first time in three years, joint pain has returned. Hair loss is not as bad, but I don’t think it has been a contributing factor. Stress triggers have been eliminated and it has helped tremendously!! So it looks like the pantry will be back to strict Paleo again. I need no more proof than what I have experienced….stay with your lifestyle for continued health!

    I just wanted to say that I NEVER thought I would ever like your coffee recipe. Ever. Until I tried it. I add cocoa and enjoy it twice a day now. Thank you!

    That mold is so cute! I love this idea to get more coconut oil in my kids diet. I make coconut oil fudge but then I eat it all myself and don’t share with the kids, lol. Just kidding (sort of).
    I also like the idea of this melt away in some of my morning herbal tea. I’ll have to give that a try…
