August is hot where we live. We may be wilting, but the heat-loving plants in the garden love it! This Cucumber Melon Mint Smoothie is the perfect way to use seasonal produce while cooling down.
In-season produce is so worth it, both for its incredible flavor and price. If you don’t have a garden, find a local farmer’s market or produce stand. (And start planning a garden for next year!)
Drink Your Produce
My go-to way to eat veggies and fruits is usually just in a giant salad, but having another option is nice. We pretty much have our favorite smoothie recipes down to a science and they are a great way to get extra nutrients into picky eaters or give kids “a treat” that is still good for them.
Smoothies can pack quite a sugar hit (even if it is natural sugar), so in our house they aren’t an everyday thing and I rarely serve them for breakfast. (Here’s what I do serve.)
This Cucumber Melon Mint Smoothie is more of a snack or refreshing drink than a meal, but for some blood-sugar balancing protein, try adding a scoop of collagen powder to this (or any) smoothie. Unlike gelatin, collagen powder won’t clump in cold liquids.
How to Make a Cucumber Melon Mint Smoothie
The name of this smoothie pretty much gives the whole recipe away! Take melon, cucumbers, and fresh mint and blend in your favorite blender with water (or coconut water) and a scoop of collagen if desired.
Feel free to substitute your favorite type of melon, but we like watermelon and cantaloupe best in this recipe.
I leave the peel on the cucumber for extra nutrients (you may want to peel if non-organic). It’s also a good idea to chop off an inch from both ends of the cucumber to remove the bitter blossom end.
If the cucumber is a bit overgrown (it happens!), half the cucumber and scrape out the largest seeds before blending.
Tip: Give the kids some toothpicks and let them make fancy garnishes with the leftover cucumber and melon!
Cheers to summer!
