Ever had spinach artichoke dip in a restaurant? This recipe is similar to that but with more protein and no chips. I had a craving for spinach artichoke dip one night and decided to turn it into a whole dinner: spinach artichoke chicken in a slow cooker.

Spinach Artichoke Chicken

The chicken is topped with spinach, artichokes, and a mix of cheeses for a very protein rich (and low carb) quick meal that can be easily made in the Crock-Pot or on the stove.

Some kids might not like the strong flavor of the artichokes, but mine really enjoyed this recipe. We served it with homemade Caesar salad and it was wonderful!

This can be made in a slow cooker or just baked in the oven for about an hour.

Ingredients

Instructions

  • Chop the chicken into bite-size pieces.
  • Season the chicken with garlic powder, salt, and pepper and place in Crock-Pot for 2 hours on high or 4 hours on low.
  • When the chicken is almost cooked, add the well drained spinach, artichoke hearts, cream cheese, and Parmesan cheese.
  • Cook for another hour until the cheeses are well and stir to incorporate flavors.
  • Top with mozzarella cheese and serve.

Notes

If you’d rather bake this in the oven, simply combine all ingredients except the mozzarella cheese and cook it at 375°F for about an hour, adding mozzarella to the top for the last 10 minutes.

    This might be a silly question, but does the spinach need to be frozen? Would fresh spinach become over cooked? Thank you! Do love this recipe as is.

    If you’re cooking this is the oven, how long do you cook the chicken for? And then how long do you cook with the rest of the ingridents for?

    So it’s not really clear: When cooking in the oven, do you wait until the chicken is almost cooked before you combine the remainder of the ingredients and bake? OR do you combine everything all at the beginning with the raw chicken and bake?

    Excited to try this recipe! But can you please clarify – do you cook the chicken on low for 4 hours, then 1 additional hour after adding the spinach, artichokes, and cheese? Or do you add the spinach/artichoke/cheese after 3 hours, to cook for a total of 4 hours?

    Hi. Can you send your calorie detail? I did min and it came up almost 500 calories and 9 carbs. I understand a little difference, but thats huge

    Hi, I want to make this dish, but when I put all the ingredients in MyFitnessPal, and indicate 6 servings, I get 411 calories per 1 cup; not 289. I get even more calories when I put it in Carb Manager! I don’t know what is going on. 289 does seem very.

    Loved it! I used real garlic cloves instead (everything tastes better with real garlic!!!)! I can’t use just one or two cloves so I used about 7 🙂 so good!!!

    Can I sub fresh baby spinach for the frozen spinach? If so should I add it the same time as you would the frozen? Thanks!

      You can, but I would not add the fresh spinach until close to the end. It will wilt easily and quickly with the heat. You also may need to add more liquid if needed (bone broth or water would work)!

    Should I cook the chicken in a skillet then transfer to a baking dish and add the other ingredients adding the mozzarella the last 10 min or so?

    Made this today in the crock pot, with the substitution of full fat sour cream instead of cream cheese. It tasted really, really good.

    Also, I had an industrial sized tin of artichoke hearts in water. Marinated artichokes would have given me a bit oilier sauce, and I was really happy with the consistency of the sauce I created.

    I cut up the chicken and put it i the crockpot. Of course I then forgot to have my hubby turn it on. I would love to make this tonight how do I make it in the oven

        If cooking in the oven, do I cook it all at the same time or add spinach and cheese towards the end and if I should add it at the end, how long into it should I add them?

    This was aaaaaamazing! I was looking for something to make tonight and was getting short on time. This was super easy. I made it in a cast iron skillet on the stove. It almost took as long to dice the chicken as to make the remainder of the meal. I subbed fresh baby spinach as I didn’t have frozen. I just made sure to drain all the liquid off before adding the cheeses. My family raved about this meal!
