Ever had spinach artichoke dip in a restaurant? This recipe is similar to that but with more protein and no chips. I had a craving for spinach artichoke dip one night and decided to turn it into a whole dinner: spinach artichoke chicken in a slow cooker.
Spinach Artichoke Chicken
The chicken is topped with spinach, artichokes, and a mix of cheeses for a very protein rich (and low carb) quick meal that can be easily made in the Crock-Pot or on the stove.
Some kids might not like the strong flavor of the artichokes, but mine really enjoyed this recipe. We served it with homemade Caesar salad and it was wonderful!
This can be made in a slow cooker or just baked in the oven for about an hour.

do you just eat this on it’s own? Or what do you serve with it? My knee jerk reaction is picturing it over rice (can you tell I’m new to being grain free?)
You know what this would be amazing with…spaghetti squash! I’m going to try it with Caesar salad tonight, though.
I think if you want to go totally grain-free, you can’t have rice either, or so my paleo husband says.
Do you think you could modify this recipe to be dairy free? How do you think coconut milk would work in replacing cheese?
Did you drain the artichokes completely or add some of the oil to the mix?
If you can find some without vegetable oil, just dump it all in… if not, drain them!
I don’t own a crock pot, but I think I’ll try this in my dutch oven in the oven! Looking forward to it.
That sounds so good! My family favorite it slow cooker Mexican Shredded Chicken.
One of my favorite crockpot recipes is from Taste of Home for French Beef Stew. Here is a link: https://www.tasteofhome.com/recipes/french-beef-stew/. I know the potatoes have to go. Any other changes??
I use yams or sweet potatoes in my beef stew
Do you have any ideas for making it dairy free? Thanks, so much!!
This sounds great. I love artichoke but haven’t introduced it too often to the kids. I like that all of your recipes have looked easy so far. As an overwhelmed mama, I thank you!
My daughter learned to love artichokes after first having them in spinach and artichoke dip, so I’d say give it a try!
This is so goo. I did the same thing about a month ago. I really wanted spinach artichoke dip, so I made it and served it over sliced chicken breasts. It was great, but I think next time I’ll just mix it right in.
This sounds so good! You are making my hungry now. And the best part is that it looks easy to make!
I agree it looks very tasty. Can you tell us how many calories and carbs/serving?
