Many of my recipes are simple stir fry type recipes because these are the ones I most often cook myself! From a convenience perspective, I certainly understand why many people choose fast food or processed food options… they save time (and sometimes money too).

That being said, with a little ingenuity, it is possible to make healthy options that are also fast and simple to prepare. I’ve found that by changing the spices used, it is easy to make a simple ground beef recipe taste delicious and add variety to a basic meal.

This simple stir fry is one of our favorites, and it is somewhat inspired by my Greek Meatloaf Recipe, which is one of my all time favorite recipes…

Greek Stir Fry Recipe

A delicious and simple stir fry recipe inspired by the flavors of Greek cuisine such as fennel, mint, garlic, and basil.

Ingredients

  • 1 lb ground beef
  • 1 large onion
  • 2 TBSP coconut oil (or butter)
  • 1 tsp basil
  • 1 tsp oregano
  • 1 tsp marjoram
  • 1 clove garlic (minced)
  • 2 TBSP fennel bulb
  • 2 TBSP fennel greens
  • 4 leaves fresh mint
  • 15 oz can of tomatoes (diced)
  • 1 lb green beans (fresh or frozen)

Instructions

  • In a large skillet, brown the ground beef.
  • While the meat is cooking, dice the onion.
  • When the meat is nearly cooked, add the coconut oil and onion and cook until the meat is finished cooking.
  • Stir in the basil, oregano, marjoram, and minced garlic.
  • Mince the fennel bulb and greens and mint and add them to the skillet.
  • Drain the diced tomatoes and add them and the green beans to the skillet.
  • Cover the skillet and simmer 15 minutes or until all vegetables have softened.
  • Check after ten minutes and add a couple tablespoons of water or chicken broth if needed.
  • Serve warm and enjoy!

Notes

Fennel greens (also called fronds) are the feathery top of the fennel plant and can be chopped and used just like other herbs.

    Love this dish!!!! Great flavor, and love how versatile it is. We had elk meat so used that instead of beef, and crushed tomatoes instead of diced. We served it over rice. Will be adding this to our regular rotation. Thanks for the recipe!!

    This was delicious! I had to add an extra can of tomatoes bc it was way too dry and didn’t think that chicken stock would help as much. Just saw the comment about adding cinnamon and that’s a great idea for next time!

    I really appreciate blogs like this that gives simple healthy recipes. I really want my mom to eat healthy stuff that is why i keep searching and trying recipes that looks easy, good and really healthy. Thanks for this one, ill give it a try asap! 🙂

    Hi– are the fennel greens the stalk part or the fronds? Sorry I’m not too familiar with cooking with fennel but this recipe sounds great
