Easy Oven Omelet

Easy and Healthy Oven Omelet Easy Oven OmeletOn days when a fast and simple breakfast is needed, an oven omelet can be a great way to save time. Just prepare and stick in the oven while you get ready or shower, and it is ready by the time you are done. This recipe is very versatile and can be changed to fit your family’s tastes. You can use leftovers from the night before and pre-chop as you put them away to save extra time.

Ingredients:

  • Chopped Veggies of choice (spinach, mushrooms, onion, pepper, cooked sweet potato, cooked broccoli or cauliflower, etc)
  • Chopped meat of choice (bacon, sausage, chicken, ham, pork, steak, etc)
  • 12 eggs
  • Butter
  • Spices to taste

How to make it:

  1. Cook or heat meat in large oven-safe pan with butter until cooked/hot
  2. Add vegetables and cook until cooked or heated
  3. Crack eggs and put directly in pan
  4. Add spices of choice
  5. Scramble with fork until yolks are broken and ingredients are mixed
  6. Put in oven at 350 for 20-30 minutes until cooked.
  7. Remove, cut like a pie and serve. Can be wrapped in foil to eat on the go.

    This is a great recipe and one I use all the time.  My favorite veggie to add that wasn’t mentioned was diced tomatoes which help to keep the omelet/quiche moist.  I dislike it when it is very dry and since I don’t do dairy anymore, the tomatoes are my substitute for what cheese used to do.  I like it with the red bell peppers, onions, chopped fresh spinach, tomatoes (lots!) and bacon.
