I present to you my favorite salad ever! When our garden is producing strawberries, I eat this salad as much as I can. I enjoy it so much that I’ve even eaten it for breakfast with eggs on the side!

Not only is this salad beautiful to look at, it’s easy to make and kids love it too.

Simple Strawberry Feta Salad

This salad came to be one day when I was inspired by the seasonal offerings of my garden and our local farmer’s market. I topped fresh spinach with sliced strawberries and cucumber and tossed some toasted nuts on top. I usually use pecans and cashews, but you can really use whatever you have on hand.

When my garden ran out of fresh strawberries and spinach one day, I made the trip to our local farmer’s market and discovered a new vendor selling homemade, raw, grass-fed cheese. Yes, please! I decided to try all the kinds… because cheese!

I hadn’t used feta much before and wasn’t sure what to do with it. But I figured when in doubt, throw it on a salad. So I did. And it was delicious. I also use it on my watermelon salad with feta and mint.

Doesn’t It Need Salad Dressing?

In my opinion, the bright fresh flavors do so much for this salad that it only needs a drizzle of olive oil. Not all of my family agrees. Some of them really love salad dressing, so I let them choose their own. I make my own salad dressings, so we usually have a variety on hand. Some of our favorites are:

If you are the over-achieving type (like me) and have five extra minutes, you could make your own homemade salad dressing… maybe a strawberry vinaigrette?

Customizing Your Salad

Salad recipes provide a great jumping-off point for customization. For this one, you could of course use any type of salad green or a mixture of several types. If you don’t have any feta on hand, maybe some cubes of mozzarella? Or if you like stronger cheeses, some Parmesan or bleu cheese.

The strawberries are pretty vital to the recipe, but you could substitute raspberries in a pinch.

Ingredients

  • 4 cups fresh spinach
  • ¼ cup feta cheese
  • ½ cup strawberries (sliced)
  • ¼ cup cucumber (sliced)
  • ¼ cup cashews (or pecans)
  • 1 TBSP  olive oil

Instructions

  • Place the spinach on a large plate or in a bowl.
  • Top with crumbled feta, sliced strawberries and cucumber, and nuts.
  • Drizzle with olive oil.
  • Enjoy and repeat!

    mm sounds delicious! I make mine almost the same- Avocado slices instead of cuc and sometimes I throw thin peach slices! I put feta cheese, sunflower seeds and sometimes almond slices. I bet Walnut would be good with it to. Anywho- Will definitely have to try it with cucumber.

    I prefer brie or blue cheese on such salads. They’re mixing very well with sweet fruits and crunchy nuts. And try a pear, when strawberries are out of season.

    this is almost my exact favorite salad, just switch out dried cranberries for the strawberries and red pepper for the cucumber. :o) I also make a homemade ranch dressing that I love!
