Ever heard of green goddess salad dressing? I’d heard of it, but never paid too much attention to what it was because it just seemed kind of weird. Turns out it’s a super simple, fresh, and delicious dressing that makes use of spring and summertime garden herbs. Since I make a lot of my own salad dressings, I figured why not give this one a shot?

Green Salad Dressing?

So what in the world is green goddess dressing and why is it green? Green goddess has been around for a long time. As is true with any classic recipe, it frequently gets reinvented.

The base of the original was mayonnaise or a combination of mayonnaise and sour cream. In my version, I use plain yogurt. Since I make my own yogurt I usually have a bunch of plain yogurt on hand and I was thrilled to find a new way to use some of it. It gives the dressing a nice, tangy, lightness and a kick of probiotics.

The vibrant green hue comes from a combination of fresh herbs.The best part of this recipe is that I can use up whatever odds and ends of herbs I have in the fridge or growing in the garden. Every time I’ve made it, it has been a little bit different, but always delicious.

Here are some of the herbs I’ve tried using (from the garden if possible!):

  • Cilantro
  • Dill
  • Fennel fronds
  • Fresh basil
  • Green onion
  • Mint
  • Parsley
  • Tarragon

If you’re looking for a specific flavor profile (like Mexican or Greek), try emphasizing the herbs that fit that cuisine. Like more cilantro and green onion for Mexican or more fennel and mint for Greek.

Creative Ways to Use Green Goddess

Since green goddess is made with yogurt and fresh herbs, it doesn’t keep for as long as vinaigrette-type salad dressings. When we only use part of a batch with dinner I try to find other ways to use up the rest throughout the week.

After some experimentation I’ve found that we like it really well whisked into eggs for a frittata for breakfast, as a veggie dip at lunch time, and even as a sauce for roasted vegetables or chicken for dinner.

Equipment

  • Food processor or immersion blender

Ingredients
  

  • 1 ½ cups fresh herbs (packed, such as basil, cilantro, parsley, tarragon, fennel fronds, dill, green onion)
  • 1 cup plain yogurt
  • ½ tsp salt

Instructions
 

  • Combine all ingredients in the bowl of a food processor and process until smooth or use a medium-sized bowl and an immersion blender.
  • Serve and enjoy!

Notes

Try using the leftover as a dip for veggies or roast chicken or mixed into eggs in a frittata or quiche.
