This dessert is one of my favorite recipes of all time. It is absolutely delicious, and when I serve at parties, no one notices the absence of sugar or grains. My kids love this and ask for it instead of birthday cake. On top of all that, it is incredibly easy to make!

Healthy Raspberry Chocolate “Pie”
Ingredients:
- 1 cup raw almonds or raw almond meal
- 1/4 cup coconut oil or melted butter (or more)
- 4 TBSP unsweetened cocoa powder
- 1 tsp raw honey, or to taste (optional)
- 12 ounces fresh raspberries (big package, or one pound fresh strawberries)
- 1 cup unsweetened heavy cream (optional, but good)
- 1/2 tsp vanilla
Directions:
- Put almonds in food processor or high-powered blender and pulse until powdered. (Not necessary if using almond meal)
- In bowl, mix ground almonds, coconut oil (or melted butter), cocoa powder and honey. Should be crumbly consistency, use more coconut oil or butter as needed.
- When crumbly, press into bottom of round pie pan or 8×8 glass baking dish
- Top with berries
- Store in fridge at least 30 mins or until ready to eat
- Whip heavy cream with vanilla until thickened and store in fridge
- Before serving, top with whipped cream
Can also be made in ramekins or small bowls to make individual servings.
