A homemade take on take-out cashew chicken that's served as a lettuce wrap for a light and refreshing meal.

butter
(or coconut oil)

chicken breasts
(or thighs, diced)

cup
cashews

large leaves
bibb lettuce
Sauce

cup
chicken broth
¼
cup
tamari
(or coconut aminos)

maple syrup

TBSP
rice vinegar
1
tsp
sesame oil

cloves
garlic
(minced)

tsp
fresh ginger
(grated)

arrowroot powder
Instructions
In a large skillet or wok, melt the butter or coconut oil over medium-high heat.
Add the chicken pieces and cook, stirring frequently until cooked through.
Add the sauce ingredients to a medium-sized bowl and stir together.
When the chicken is cooked add the sauce to the skillet.
Cook and stir over medium heat and allow the sauce to thicken.
Once the sauce is thickened, stir in the cashews.
Let the finished cashew chicken cool slightly and serve in lettuce leaves.
Garnish with scallions or green onions if desired.
Notes
This can also be served over
cauliflower rice or fried rice.
