Italian Grinder Chopped Chicken Salad
This tastes just like an Italian grinder sandwich but without the bread! High in protein and full of flavor.

shredded cooked chicken

salami or soppressata
(diced)

pepperoni
(diced)

cup
provolone cheese
(thick-sliced and diced)

crumbled feta cheese

grape tomatoes
(diced)
⅓
cup
banana peppers
(diced)

red onion
(thinly sliced or diced)
Dressing
½
cup
mayonnaise
¼
cup
Parmesan cheese
(grated)

red wine vinegar

banana pepper juice
(to taste)

dried oregano

tsp
garlic powder
black pepper
(freshly cracked, to taste)

Instructions
In a small bowl or glass measuring cup, whisk together all dressing ingredients until smooth.
Taste and adjust as needed. The dressing should have a tangy kick.
In a large bowl, combine the chicken, salami, pepperoni, provolone, feta, tomatoes, banana peppers, and red onion.
Pour most of the dressing over the salad and toss well to evenly coat. Add the remaining dressing if needed.
Serve immediately or store in an airtight container in the refrigerator for up to 4 days.
