Place a large, oven-proof skillet in the oven to heat up. If you don’t have one, just skip this step and use a different baking dish in step 6.
Brush any dirt off the mushrooms and give them a quick rinse if necessary.
In a small pan, melt the butter over medium low heat.
Add the minced garlic and lemon zest and saute 2 minutes until fragrant.
Remove the skillet from the oven and place the mushrooms, stem side up, in a single layer in the bottom or in the bottom of a baking dish. If you run out of room, place the remaining mushrooms over the gaps between the first layer of mushrooms.
Drizzle the garlic butter over the mushrooms.
Sprinkle with salt.
Return the skillet to the oven and roast for 20 minutes.
Squeeze the lemon juice over the mushrooms and sprinkle with fresh parsley.
Serve and enjoy!
