Ingredients
¼
cup
olive oil
1
onion
(chopped)
2
cloves
garlic
(minced, or 1 tsp garlic powder)
8
cups
chicken broth
1
tsp
salt
(or more to taste)
½
tsp
black pepper
1
small head
cabbage
(cored and coarsely chopped)
14.5 oz
can
Italian-style stewed tomatoes
(drained and diced)
Instructions
In a large pot, saute the onion and garlic in olive oil until the onion is translucent, about 5 minutes.
Add the broth, salt, and pepper and bring to a boil.
Add the cabbage and tomatoes and simmer for 20-30 minutes, until the cabbage is soft.
Serve and enjoy.
Notes
I like to top my soup with a little thinly sliced fresh basil when I have it. Try adding some browned Italian sausage!
