Ingredients

cubed or sliced cushaw
peeled

TBSP
olive oil

TBSP
dried
rosemary

tsp
sea salt
Instructions
In a large bowl, toss cushaw cubes with olive oil, rosemary, and sea salt.
Spread evenly on a large
baking sheet.
Cook in 400°F oven for 15 minutes.
Stir and cook for 10 minutes more.
Notes
To make roasted slices instead of cubes:
Brush or spray with olive oil. Lay flat on a baking sheet. Sprinkle with sea salt and rosemary. Bake for 25 minutes, flipping halfway through.
