These simple zucchini fritters are easy to make and a great alternative to hash browns and tater tots with an extra nutrient boost! 

Ingredients

Instructions

  1. Preheat oven to 400°F.
  2. Grease a baking sheet or muffin tin.
  3. Grate the zucchini with a box grater or food processor.
  4. Add the salt and squeeze very tightly with a towel to get the excess liquid out.
  5. Put in a medium sized bowl.
  6. Grate the onion and add to the bowl.
  7. Add the eggs, Parmesan cheese, almond flour, and spices and mix until combined.
  8. Put Tablespoon size amounts of the mixture onto the baking sheet or fill the muffin tins ½ full.
  9. Bake for approximately 18-20 minutes or until tops and sides are starting to brown.
  10. Serve alone or with homemade ketchup. Can also pan fry in coconut oil for a crispier outer coating.
  11. Enjoy!
