Instructions

  1. Preheat oven to 400°F.
  2. Rub the outside of the chicken skin with the butter until well coated.
  3. In a small bowl mix together all the spices and sprinkle liberally over the entire chicken.
  4. Place the chicken in a roasting pan and roast for 1-1½ hours until the chicken reaches an internal temperature of at least 170°F.
  5. Remove the chicken from the oven and let sit for 20 minutes to intensify flavor.
