Bacon Lime Sweet Potato Salad Recipe

This delicious dish combines sweet potatoes, bacon, lime, and herbs and spices to create a flavorful and simple meal.

Ingredients

Instructions

  1. Preheat the oven to 375°F.
  2. Line a rimmed baking sheet with foil and lay the bacon flat on the sheet.
  3. Bake for 15 to 20 minutes, until the bacon is slightly crispy.
  4. Let cool then roughly chop.
  5. In a roasting pan or rimmed baking sheet lined with aluminum foil, toss the sweet potatoes and garlic in coconut oil and roast for about 30 minutes or until slightly browned. (Cook time will vary depending on size of sweet potato cubes.)
  6. While the sweet potatoes are roasting, whisk together the lime juice, olive oil, and balsamic vinegar.
  7. Toss in green onions, dill, red pepper flakes, cinnamon, and salt and pepper and mix well.
  8. Once sweet potatoes are finished cooking, toss them together with the dressing and bacon.

Notes

This dish is awesome for any meal -- just add desired protein and you're good to go.
