I have just eaten a delicious ‘warm’ salad:
Lettuce, tomato, cucumber, fresh fennel and loads of extra virgin olive oil all mixed together.
Fry red onion, courgette (zucchini) and shredded chicken (I had boiled mine) with butter and chilli flakes.
Add the hot food to the cold food and squeeze fresh lemon over it.

I just signed up. This is my favorite salad. It is from http://lynsaycaylor.wordpress.com/2011/05/03/paleo-recipe-baked-chicken-taco-salad/

I just made a couple changes. The taco seasoning is delicious!!

    Ingredients

    1-2 lbs. boneless
    chicken breast (preferably free range)

    Olive oil

    Romaine lettuce

    Chopped onions,
    peppers, mushrooms, carrots, etc.

    Taco
Seasoning Ingredients (per 1 lb of meat) – From Mark’s Daily Apple

    1 tablespoon chili
    powder

    1 teaspoon cumin (I
substitute chili powder for this in addition to the chili powder above)

    1/4 teaspoon onion
    powder

    1/4 teasoon garlic
powder or minced garlic (I use garlic salt)

    1/2 teaspoon dried
    oregano

    1/2 teaspoon paprika

    1 teaspoon salt

    1/2 teaspoon black
    pepper

    Instructions:

    Preheat the oven to
350 degrees. Place chicken in baking pan. Lightly coat with olive oil and cover
top with taco seasoning. Cook for about 40 minutes. Check that chicken temp is
above 165 degrees before taking out.

    Sauté all chopped
veggies in a pan with coconut oil or butter– cook until desired tenderness.

    Start your plate
with a bed of romaine lettuce, add chicken,
and sautéed veggies. Cooked veggies add enough to the meal to where you
    don’t need a dressing.

  • Lyndsysoven

hi!! sorry it took me so long to look at this!  Here is the Recipe: 1 jalepeno pepper, seeded and coarsely chopped, 1 clove garlic, 3/4 tsp minced fresh ginger root, 1/4 cup lime juice (fresh lime preferrably), 1/3 cup honey, 2 tsp basalmic vinegar, 1/2 tsp salt, or to taste, 1/4 cup packed cilantro leaves and 1/2 cup evoo (extra virgin olive oil).

Place the jalapeno pepper, garlic clove, and ginger into a food processor or blender (or mince by hand); pulse until the jalepeno and garlic are finely chopped. pour in lime juice, honey, vinegar, and salt. Add the cilantro leaves; pulse a few times to blend. turn the food processor or blender on, and slowly drizzle in the olive oil until incorporated into the dressing. Season to taste with salt before serving.

Enjoy! it is really yummy! oh, it will separate in the fridge. Just shake before serving. thanks!
