“May misfortune follow you the rest of your life, and never catch up” -Traditional Irish Toast
I’m Irish, which used to mean consumption of a lot of potatoes and meat, especially around the 17th of March! Celebrating St. Patty’s day also used to mean green beer, soda breads and other treats.
Since I switched to real food and cut back on potatoes and grains, I’ve had to find some healthy alternatives to these traditional favorites, and I’ll be making them all this week! Unfortunately, I’m yet to find a good alternative to good beer…
If you celebrate St. Patrick’s day, put on the green, brush up on your toasts and try one of these great recipes! Sláinte!
Healthy Irish Recipes for St. Patrick’s Day
Corned Beef and Cabbage-A traditional Irish dish of beef cured in a brine served over cabbage.
Shepard/Cottage Pie- A meat and potato dish, made without the potato!
Bangers and Mash- A savory sausage and potato dish made without the potatoes. Mashed cauliflower topped with browned sausage and onion gravy.
Irish Champ- This one is so simple, I’m not posting the recipe. Just make mashed “potatoes” with cauliflower like in the recipes above, but mix in a little extra butter and some sliced green onions. Delicious and simple!
Happy St. Patrick’s Day Tomorrow!
May you be poor in misfortune, Rich in blessings,
Slow to make enemies, quick to make friends,
But rich or poor, quick or slow,
May you know nothing but happiness From this day forward.
Do you celebrate St. Patrick’s day? If so, what are your traditions?
