I’ve shared my healthy kids snacks, healthy breakfast ideas, and healthy salad dressings that all can be made at home to save time and money… but what is life with no dessert? This week, I’m sharing the top seven dessert recipes that we eat on special occasions. If you are going to indulge, try these recipes! They taste great and have health benefits (certainly more than I can say for most desserts!)
A mixture of almond joy bars and coconut macaroons, these naturally sweet bites are packed with nutrition and healthy fats! Kids love them and you can feel good about letting your kids eat them!
We eat this in place of birthday cake during our summer birthdays when berries are in season, but in can be made year round! This “pie” is a chocolate almond crust with fresh raspberry filling and homemade whipped cream topping!
Eating healthy doesn’t mean leaving behind the joys of chocolate every once in a while. These cookies are packed with protein and don’t contain any flour or sugar. They use almond butter and eggs as a base and have a delicious chewy chocolate taste!
This variation on the Homemade Energy Bar recipe makes them more like cookie dough, or cookies, but you don’t have to bake them. To make, just use the recipe above and instead of forming into bars, make into the shape of cookies, or just eat out of the bowl.
This smoothie can be adjusted to be a wonderful replacement for high fructose corn syrup laden ice cream. Just make the recipe above, but add an extra cup of ice. You can also stick in the freezer for a few minutes to harden more, or put in an ice cream maker!
Fresh Berries with Homemade Whipped Cream
This is possibly my favorite dessert recipe of all time, and it is really simple to make. Just put a handful of fresh berries (or any fruit) into a bowl and top with homemade whipped cream. To make the cream, whip, whisk or blend with an immersion blender 1/2 cup heavy whipping cream with 1/2 tsp vanilla.
Baked Apple Crumble
Another easy and delicious recipe that kids (and adults) will love! Just core and peel 4 apples (or 1 per person) and thinly slice into medium baking dish. In a blender, grind 1/2 cup almonds (or more) until powdery. Using your hands, mix the almonds with 3 TBSP butter or coconut oil, 2 TBSP cinnamon and 1/2 tsp stevia (optional). Crumble the almond topping over the apples, drizzle with some coconut milk and bake at 350 until tender.
